Spicy Sausage Chuck Wagon Chil

lb(s) (675 g) extra lean ground beef

- 4 narrow links of spicy, cooked sausage (salami, pepperoni or ham sausage)

medium onion

oz (398 ml) can kidney beans and juice

oz (284 ml) can mushrooms and juice

medium carrots

oz condensed cream of tomato soup

tsp pepper

to 2 teaspoons chili powder

Salad

1
bag baby spinach
Fruits and nuts (optional)
Your favorite salad dressing

Step 1

Brown meat in large nonstick stovetop pot at medium/high until meat is no longer pink.

Step 2

Cut spicy sausages in ½ inch slices and add to pot.

Step 3

Chop onion and add to pot.

Step 4

Add kidney beans and juice to pot.

Step 5

Add mushrooms and juice to pot.

Step 6

Peel and thinly slice carrots and add to pot.

Step 7

Add soup, pepper and chili powder to pot and stir.

Step 8

Bring chili to a boil, reduce heat, let simmer for 1 hour. Add water if it appears too dry and thick. Add more chili powder if desired.

Step 9

Rinse spinach and spin in salad spinner. Add fruits and nuts. Drizzle with favorite dressing.

Step 10

(Set aside some chili for Taylor’s famous burgers).
