Strawberry Arugula Salad with Walnuts and Goat Cheese

Light and fresh, this dish is perfect as a lunch or pre-dinner appetizer.

4 strawberries, hulled and cut in half
5 cup baby arugula
¼ cup walnuts, chopped
3 Tbsp goat cheese
3 Tbsp olive oil
1 Tbsp balsamic vinegar
1. In a large bowl, mix strawberries, arugula and walnuts. Pour in olive oil and balsamic vinegar and toss. Plate the salad, and top with goat cheese.
