Superfood Salmon Salad

In just 15 minutes, you can have a delicious salmon salad! Not only super tasty, it also has healthy components like grapefruit, quinoa and avocado.

Directions for: Superfood Salmon Salad


1 tsp extra virgin olive oil

1 3 oz salmon fillet

½ cup grapefruit wedges

¼ cup sliced avocado

¼ cup cooked quinoa

2 cup spring salad mix


1. Make the dressing. Whisk together vinegar, honey and mustard. Whisk in oil until emulsified.

2. Preheat the broiler to high. Arrange tin foil in the center of a baking sheet and place the salmon on it. Drizzle with olive oil. Season with salt and pepper and broil until cooked to medium, about 5 minutes.

3. Meanwhile, toss salad greens, grapefruit wedges, sliced avocado and quinoa with dressing and toss to combine. Season with pepper.

4. Break salmon into pieces and add to the salad to serve.
