tsp sesame oil

Thai eggplant, halved and thinly sliced
½
cup daikon, ½-inch cubes
¼
cup kimchi, loosely chopped

Tbsp gochujang (Korean condiment)

Tbsp oyster sauce

tsp honey

tsp soy sauce

tsp rice wine vinegar

tsp ground black pepper

g package udon noodles, blanched

Step 1

Heat the sesame oil in a medium pan on medium-high heat.

Step 2

Place the sliced eggplant, daikon and kimchi in the pan and sauté for 3 minutes. Reduce to medium heat, add the next 6 ingredients to the pan, and stir until sauce is well incorporated.

Step 3

Let the mixture cook for another 5 minutes, stirring occasionally. Finally, throw the udon noodles into the pan, toss until evenly coated and continue to cook until the noodles are warmed through, about 1 minute. Now eat by yourself like the bachelor(ette) you are!
