Taco casserole is a quick and easy take on taco night. Instead of making up individual tacos for each person, make the whole meal in one dish. Serve with extra toppings like shredded lettuce and sour cream.

onion, finely chopped

lb(s) lean ground beef

Tbsp chili powder

Tbsp ground cumin

tsp Knorr® Selects™ Beef Bouillon Powder

cup water
1
can (540 mL) no salt added black beans, drained and rinsed
1
cup frozen corn kernels
1
jar (430 mL) medium salsa
2
cups lightly crushed corn tortilla chips
2
cups shredded 2% cheddar cheese
1
vine tomato, diced
3
green onions, thinly sliced

Step 1

Preheat oven to broil.

Step 2

Heat olive oil in a large non-stick frying pan over medium-high heat. Add onion and cook until lightly golden, about 4 minutes. Add ground beef and cook, breaking up with a wooden spoon, until no longer pink, about 4-5 minutes. Add chili powder, ground cumin, Knorr® Selects™ Beef Bouillon Powder and water. Let boil, until almost all liquid has been absorbed, about 7-9 minutes.

Step 3

Add black beans, corn kernels and salsa. Cook until corn is tender, about 2 minutes. Tip beef mixture into a 9×13-inch casserole dish. Top with tortilla chips and shredded cheddar cheese.

Step 4

Broil until cheese has melted and, about 1-2 minutes. Top with diced tomatoes and sliced green onions.
