It’s like your classic shepherds pie, but a lot more fun. In this recipe, we playfully top Shepherd’s pie filling with crispy tater tots in lieu of the traditional, creamy mashed potatoes. This dish is neither a pot nor a pie, but we think you’ll love its ease, deliciousness and nostalgia, whatever you call it!
Ingredients
Directions
Preheat oven to 400ºF.
In a large skillet, heat oil over medium. Add onion and cook until translucent and fragrant, about 2 minutes. Increase heat to high and add in beef and salt. Stirring often, cook until no pink remains in the meat, about 5 minutes.
Add in flour and tomato paste and stir to combine. Pour in beef stock and cook until mixture is thick and saucy, about 5 minutes. Fold in frozen vegetables.
Smooth mixture into a large casserole dish. Arrange tater tots on top of beef mixture until completely covered. Bake until tater tots are golden and crisp, about 35 minutes. Serve.
