These breaded and baked cauliflower bites act as imposters for chicken wings - a great vegetarian option!

Directions for: The Imposter

Ingredients

3 cups oil, for frying

1 head cauliflower, chopped into bite-size pieces

½ cup flour

½ cup water

¼ tsp garlic powder

½ tsp salt

1 tsp melted butter or ghee or margarine

⅔ cup hot sauce

1 tsp butter, melted

½ cup blue cheese, crumbled

2 cups sour cream

Salt and pepper

1 carrot, peeled and cut into sticks

1 stalk celery, cut into sticks

Directions

1. Preheat oven to 450ºF (230ºC). Preheat oil to 425ºF in a frying pan.

2. In a medium bowl add flour, water, garlic powder, and salt. Whisk until smooth. Place cauliflower into batter and evenly coat. Use a fork to scoop out the cauliflower and place into oil. Cook in even batches so there’s enough space around the cauliflower to properly fry. Remove when cauliflower is a golden brown colour. Place on paper towels to remove excess oil. In a bowl mix together hot sauce and butter. Add cauliflower and coat evenly. Place on baking sheet in oven for 5-8 minutes.

3. In a small bowl add together blue cheese, sour cream, and salt and pepper to taste. Plate the cauliflower with the blue cheese dip and celery and carrot sticks.
