The PB and J Ice Cream Sandwich

This little dessert bites are cool cousins to their classic sandwich cousins.
4 cups vanilla ice cream
½ cup crunchy peanut butter
¼ cup caramel syrup
12 graham crackers
6 Tbsp grape jelly
1. In a shallow 4-inch by 4-inch pan scoop in half of the ice cream. Press it down to flatten it out and place in freezer for 30 minutes. Remove and spread the peanut butter over the ice cream. Drizzle half of the caramel syrup and place in the freezer for another 30 minutes. Now add the rest of the vanilla ice cream and drizzle the rest of the caramel on top. Cut a 4-inch by 4-inch square piece of parchment and place on top of the ice cream. Gently press down to push out the air in the ice cream. Place back in freezer for 12 hours.
2. Place 6 graham crackers on a plate. Scoop 1 scoop of the ice cream onto each cracker. Spoon a little grape jelly on the ice cream and top with another graham cracker.
