Directions for: The Perfect Pomegranate & Spinach Salad



4 Tbsp olive oil

4 Tbsp apple cider vinegar

2 tsp honey

Salt and freshly ground pepper to taste


5-6 cups spinach leaves, chopped

⅓ cup fresh cilantro leaves, chopped

⅓ cup parsley

1 cup pomegranate seeds (the seeds from one pomegranate)

⅓ cup pine nuts, toasted

¼ cup red onions, sliced (optional)



1. In a jar, combine dressing ingredients and shake well.


1. In a large bowl, combine all salad ingredients and toss.

2. Pour dressing over salad, toss again, and serve.
