Try this herb baked ham with a hint of vanilla and scotch.

Preheat oven to 375 degrees F.
Put water, onion, celery and bay leaf in a large pot. Bring to a simmer and put in ham. Cook for one hour then remove from water. Set ham aside.
In a bowl mix together mustard, 3/4 cup scotch, sugar, cayenne and vanilla. Rub the mixture over the ham.
Place on a roasting pan and bake for 3 to 3½ hours. Keep about 1/2 cup water in bottom of pan so that the pan never goes completely dry. Baste every 20 minutes with ham drippings. To test doneness the internal temperature of ham should read between 170 and 180 degrees F.
After removing the ham, deglaze the roasting pan with remaining 1/4 cup of scotch. Add 1/2 cup of water. Bring back to a boil.
Slowly whisk in cold butter to give sauce flavour, texture and a glossy appearance. Add sage. Check seasonings.
