ingredients

tsp ( 12 mL) vegetable oil

eggs, lightly beaten
½
lb(s) (250 g) boneless, skinless chicken breasts, thinly sliced
½
pkg (1 lb/454 g) rice noodles, small size, cooked

Tbsp (45 mL) green onion, thinly sliced
1
jar (355 mL) VH® Pad Thai Sauce
3
Tbsp (45 mL) roasted unsalted peanuts, chopped (optional)
lime wedges

Step 1

Heat 1/2 tsp (2 mL) oil in skillet set over medium-high heat. Add eggs; cook, stirring, until scrambled and set. Remove from skillet; cut into small pieces and set aside.

Step 2

Add remaining oil to pan. Add chicken; stir-fry until cooked through, 7-10 minutes.

Step 3

Add noodles, bean sprouts, 3 tbsp of the green onions and the eggs to skillet along with VH® Pad Thai Sauce. Stir-fry for 2-3 minutes, until noodles are tender and coated with sauce.

Step 4

Garnish with remaining green onions, peanuts and lime wedges.
