Warm Sausage and Pepper Salad

High quality Italian sausages and fresh leafy arugula are the stars of this salad.Serves 2 as a main, 4 as an appetizer.

Directions for: Warm Sausage and Pepper Salad


2 good quality hot Italian sausages

½ small onion, cut into 1-inch pieces

1 red bell pepper, cut into 1-inch pieces

1 clove garlic, minced

2 tsp chopped fresh oregano

8 pitted kalamata olives

1 splash balsamic vinegar

1 splash extra virgin olive oil

salt & pepper

4 cup washed arugula leaves


1. Heat a large sauté pan over medium heat and cook whole sausage completely.

2. Remove sausage from pan and add onion and pepper (add a little olive oil if pan is dry) and increase heat to medium-high, sautéing vegetables until tender and lightly browned.

3. Reduce heat to medium again and stir in garlic and oregano. Add balsamic and stir.

4. Slice up cooked sausage and add to pan to warm, then finish with a splash of olive oil. Season to taste and serve warm over arugula.
