Feta and watermelon salads have been all the rage over the years. This trio of updated flavours is a fresh take on the popular summer salad. Not only are they simple to make, but they are a refreshing addition to any summer barbecue when paired with grilled chicken, fish,seafood, or tofu. 

Choose a watermelon that is a perfect round shape for the best slices. And don’t worry about leftover watermelon – just blend it into a juice,toss it in a fruit salad, or pair it with your favourite cocktail.

ingredients

Mediterranean Pizza

(1-inch thick) slice from centre of watermelon (set aside two other centre slices for other pizzas)
½
cup vinegar
cup sliced red onion

tsp salt

bay leaves

cup sliced English cucumber
¼
cup crumbled feta

small basil leaves, halved

Tropical Pizza

(1-inch thick) slice from centre of watermelon

mint leaves
½
cup chopped pineapple

strawberries, sliced

Tbsp coconut, toasted

Southern Pizza

(1-inch thick) slice from centre of watermelon

peach, halved
1
Tbsp olive oil
½
small red onion, sliced

Tbsp pecans, toasted

cup goat cheese

Step 1

In small saucepan, bring vinegar, onion, salt, and bay leaves to a boil. Remove from heat. Strain from pickling liquid, and discard bay leaves.

Step 2

Arrange pickled onions and cucumbers on one watermelon slice. Sprinkle with feta cheese and basil leaves. Cut watermelon pizza into quarters to serve.

Step 3

Stack mint leaves on top of each other. Roll up leaves from one long edge. Thinly slice into strips.

Step 4

Arrange pineapple and strawberries on one watermelon slice. Sprinkle with coconut and mint leaves. Cut watermelon pizza into quarters to serve.

Step 5

Brush cut side of peach halves with approximately half of the olive oil. Heat a grill pan or skillet over medium-high heat. Place peaches, cut side down, in grill pan and cook until lightly charred, 3 to 5 minutes.

Step 6

Toss red onion slices with remaining olive oil. Cook in same grill pan over medium-high heat. Remove from heat and thinly slice peaches.

Step 7

Arrange peach slices and red onions on one watermelon slice. Sprinkle with pecans and crumble goat cheese over top. Cut watermelon pizza into quarters to serve.
