Zucchini and Onion Koftas

1 medium zucchini, grated

1 medium onion, peeled, cut in half and thinly sliced

1 cup green onions, chopped

1 tsp dried pomegranate seeds

1 tsp cardamom seeds

1 Tbsp garam masala

1 cup chickpea flour

2 Tbsp yogurt

4 Tbsp water

1 pinch salt

2 cup vegetale oil, for frying


1. Heat oil to 350°F in a deep, heavy pot.

2. Place all ingredients into a large bowl and mix well. Form mixture into golf ball-sized balls and fry in preheated oil until golden brown, about 5 - 6 minutes. Drain on paper towels prior to serving.
