Maple Smoked Breakfast Burritos

Transform your breakfast with these delicious burritos, made with Oaxaca cheese, maple smoked bacon and pickled red onions.
6 strips maple smoked bacon, cubed
3 Tbsp (45 mL) onion, chopped
½ cup (125 mL) Oaxaca cheese (substitute with mozzarella)
4 (10-inch/25.5 cm) tortillas, warmed
½ tsp (2.5 mL) hot sauce, optional
1 Tbsp (15 mL) pickled red onions, optional
1. Cut bacon into cubes.
2. In a large skillet, cook bacon over medium heat until crisp, about 5-7 minutes.
3. Add chopped onions and cook until softened, about 5 minutes. Continue to stir.
4. Add eggs to the skillet and stir for 3-5 minutes until eggs are cooked. Remove from heat and add cheese.
5. Spoon about 3/4 cup (175 mL) down the center of each tortilla. Add optional hot sauce and pickled onions. Fold bottom and sides of tortilla over filling. Grill burrito for 30 seconds on each side. Serve hot.
