French West Indies Inspiration
With our long Canadian winters, everybody dreams about the sun, the sea and white sand beaches. To counter the cold, Ricardo has decided to cook a typical French West Indies menu. His first rule is to keep his guests warm with a local cocktail called ti-punch! After this delicious drink, crispy acras (cod fritter beignets) are served follow by a richly flavoured chicken and coconut Colombo and a squash gratin. His friend Martine’s sugary banana dessert will add sunshine to the plates.
