Tbsp (30 mL) extra virgin olive oil
1
Spanish onion, halved and sliced
1
cup (250 mL) applewood smoked bacon, diced
1
tsp (5 mL) thyme leaves
1
Tbsp (15 mL) balsamic vinegar, reduced to syrup-like consistency)
1
tsp (5 mL) each flat leaf parsley, chives and chervil, finely chopped
kosher salt and freshly ground pepper

Step 1
In a large skillet set over medium heat, add oil and bacon. Cook until crisp and golden, about 10 minutes. Remove bacon from pan and reserve.
Step 2
Add onions to pan and sauté until golden, about 15 minutes, stirring frequently.
Step 3
Return bacon to pan, add the thyme and continue cooking for about 10 minutes more, stirring occasionally.
Step 4
Stir in reduced balsamic vinegar, parsley, chives and chervil and season to taste with salt and pepper. Keep warm until ready to serve.
