Tips: For a festive seasonal twist try adding roasted nuts to the recipe. You may use any baby potato or fingerlings depending on what you have available; just remember, it is important that the potatoes be cut in half. Use red potatoes if you like a firmer texture and yellow if you prefer it softer.

slices bacon, chopped

small onion, thinly sliced

carton (240 mL) CAMPBELL'S® Stock First™ Chicken Stock
1
lb(s) (454 g) baby potatoes, cut in half
⅛ cup (12.5 mL) balsamic vinegar
1
Tbsp (15 mL) brown sugar
1
Tbsp (15 mL) fresh marjoram, chopped

Step 1
Cook bacon in a covered pan over medium heat, for about 3-4 minutes.
Step 2
Add onion and cook until tender, about 3-4 minutes more.
Step 3
Add stock to deglaze, scraping up any brown bits from bottom of pan.
Step 4
Add potatoes, vinegar and brown sugar. Bring to a boil. Cook covered for 10 minutes over medium heat.
Step 5
Remove lid and continue to cook for 8 minutes. Add the marjoram and cook for 2 more minutes.
