Bite into a sandwich full of flavour! Bacon, lettuce, Black Diamond Marble Cheese and tomato served with a homemade herbed mayonnaise.

ingredients

cup (60 mL) light mayonnaise

Tbsp (15 mL) finely chopped fresh chives or green onions

tsp (10 mL) lemon juice
¼
tsp (1 mL) pepper
8
slices rye or whole-wheat bread
4
leaves lettuce
10
slices bacon, cooked and cut in half
8
thin slices Black Diamond Marble Cheese (about 6 oz/175 g)
1
large tomato, sliced
8
small dill pickles or gherkins, optional

Step 1

Herbed Mayonnaise: In a small bowl, stir mayonnaise, chives, lemon juice and pepper to blend.

Step 2

Toast bread; spread with herbed mayonnaise. Top 4 of the slices with lettuce, bacon, cheese, and tomato; sandwich with remaining slices toast.

Step 3

If desired, spear each of 8 cocktail picks with pickles. Spear each sandwich with 2 picks to secure; cut sandwiches in half between picks.
