Directions for: Cabbage Roll Soup


2 Tbsp vegetable oil

1 Tbsp sugar

3 clove garlic, minced

1 onion, peeled and diced

1 leaves bay

1 28-oz can tomatoes, strained and diced

4 cup beef stock

4 leftover cabbage rolls, chopped

salt and pepper, to taste

sour cream


1. Heat oil and sugar in a pot over medium heat. Add garlic and onions and cook until soft and slightly golden. Add bay leaf and tomatoes. Cook for five minutes, stirring occasionally.

2. Add beef stock and chopped cabbage rolls. Cook on medium-low heat for 20 minutes. Remove from heat and adjust seasonings with salt and pepper. To serve, ladle into bowls and top with sour cream.
