The juicy, sweet flavours of the popular Italian salad make an addictive waffle sandwich.
2 ½ cups Basic Pantry Pancake and Waffle Mix (See Cook's Note below)
1 cup milk
½ cup buttermilk
2 eggs, beaten
2 Tbsp oil
½ tsp onion powder
½ tsp garlic powder
3 - 4 slices fresh mozzarella
2 - 3 slices tomato
3 large fresh basil leaves, chiffonade
1. Place waffle mix, onion powder and garlic powder in a large bowl. Add buttermilk, eggs and oil and mix until just combined. Let rest for 10 minutes.
2. Coat waffle iron with oil or non-stick spray. Follow the waffle iron’s instructions for cooking and greasing the iron in between batches.
3. Pack slices of mozzarella and basil in separate airtight storage containers. Place tomatoes slices in an airtight storage container and then drizzle with olive oil and a pinch of salt. Pack all containers for assembly at noontime.
