red peppers, quartered and de seeded

L chicken or vegetable stock

vine ripe red tomatoes, quartered and de seeded

cloves of garlic
6
oz extra virgin olive oil
½
cup balsamic or (banyuls vinegar to try something different)
25
leaves of fresh basil
2
red chilies

Step 1

Place all the ingredients in a non reactive container

and leave to marinate for 2 days.

Step 2

Purée in a food processor until a nice smooth velvet

consistency. Adjust with seasoning and add more stock if too

thick.
