small potato, diced

onion, chopped

carrot, sliced

button mushroom, diced
½
cubes vegetable stock, crushed
¼
tsp curry powder

cup water
salt, to taste

Step 1

Add oil and onion to small saucepan and sauté over medium heat until softened

Step 2

Add potato, carrot and mushroom to onion and continue cooking for 2 minutes.

Step 3

Stir in curry powder and crushed stock cube.

Step 4

Add water and simmer until vegetables are cooked through.

Step 5

Add salt to taste and serve.
