clove garlic, chopped

cup (60 ml) canola oil

Tbsp (30 ml) cider vinegar

cup (500 ml) diced, cooked chicken

cup (375 ml) Canadian mozzarella, diced

green onions, chopped

large red, green or yellow pepper, diced

tomato, seeded and diced

peach, sliced
1
pear, diced
1
cup (250 ml) grapes, halved

cup (60 ml) fresh cilantro, coarsely chopped

salt and freshly ground black pepper

Step 1
In a large bowl, mix curry, garlic, oil and vinegar
Step 2
Add all other ingredients. Season generously
Step 3
Toss to coat thoroughly with dressing
Step 4
Divide salad, garnish with a leaf of curly lettuce, and serve immediately
