Grilled Melted Brie Sandwich

2 cups (500 ml) spinach, washed ans stems removed
4 panini, ciabatta or small baguette loaves
⅓ cup (80 ml) coarsely chopped walnuts or pecans
1 unpeeled pear, thinly sliced
12 ½ ounces (375 g) Canadian brie, sliced
1. Preheat barbecue to medium-high.
2. Place spinach in a microwave-safe dish with 2 tbsp (30 mL) water. Cover and cook 2 minutes on high. Drain and set aside.
3. Open bread and evenly divide ingredients among sandwiches, layering them. Close sandwiches. Quickly grill on barbecue, flattening sandwiches with a frying pan or spatula.
4. Serve immediately with a tossed salad drizzled with Italian dressing.
