Homemade Chicken Broth

to 1.4 kg chicken with giblets

Tbsp fresh basil (15 mL)

tsp poultry seasoning (5 mL)

tsp white pepper (1 mL)

tsp curry powder (2.5 mL)
Pinch of chili flakes

Tbsp parsley (15 mL)

tsp celery salt (2.5 mL)

tsp sage (5 mL)

carrot, chopped
3
stalks celery, chopped
1
zucchini, chopped
6
mushrooms, chopped in chunks
¼
cup white wine (60 mL)
12
cup water (3 quarts)

Step 1

Remove giblet bag from cavity of chicken then toss whole chicken and giblets into a slow cooker. Add spices

Step 2

Add carrot, celery, green pepper, zucchini, and mushrooms.

Step 3

Add wine and water.

Step 4

Mix.

Step 5

Broth can be made on stove top by bringing to boil and then simmering for a few hours, or in a slow cooker on low for 8 hours.

Step 6

Cool broth, strain and put into refrigerator for 2 hours.

Step 7

Skim off fat and remove chunks of cooked chicken and freeze flat in freezer bags.

Step 8

Freeze both in 10 oz (1 1/4 cup) containers.
