Have fun with this recipe: pick your favourite flavours of ice cream and create the layers whichever way you like or let your diners assembly his or her own treat. Feel free to use store bought sauces for this one. To make it an adult ice cream treat, drizzle with a splash of your favourite liqueur.

Over high heat, bring ½ cup whipping cream to a boil. Remove from heat. Place chopped chocolate in medium heatproof bowl and pour hot cream over. Stir until the chocolate has melted and the mixture is smooth. Stir in vanilla. Let cool at room temperature, about 1 to 2 hours. Makes about ¾ cup.
Drain the jar of cherries, reserving ¼ cup of the liquid for the sauce.
In a small bowl combine the cornstarch with the ¼ cup of the liquid from the jar. Set aside.
In a saucepan over medium high heat, combine the cherries, sugar and kirsch. Stir in the cornstarch mixture. Bring to a boil. Reduce the heat to medium and simmer for two to four minutes, until thickens slightly. Remove from heat. Stir in the vanilla. Let cool to room temperature before using. Leave chunky or puree if you want the sauce smoother. Make about 1 cup)
Line a baking tray with parchment paper.
Cut four 1-inch slices from each of the 3 flavours of ice cream (adjust the slices into cubes or keep in rectangles depending on how big you want the portions to be). Place on the prepared baking tray. Freeze for at least 15 to 30 minutes so ice cream is thoroughly frozen before serving.
In each large individual bowl or plate, layer a piece of brownie or sponge cake. Top with a slice of ice cream. Drizzle with some of the cherry sauce. Top with another slice of ice cream. Drizzle with some of the chocolate sauce. Top with another slice of ice cream. Drizzle with more of the cherry sauce. Top with a dollop of whipped cream. Garnish with fruit, nuts, chocolate shavings and/or candies. Serve immediately.
