large lemons

cup still water

cup super-fine granulated sugar

lemon rind, chopped

Step 1
In saucepan, heat water and sugar, stirring until sugar is dissolved. Let cool. Add rinds and lemon juice. Taste it and make adjustments as necessary.
Step 2
Freeze lemon mixture in a metal bowl, stirring every 20 minutes for 3-4 hours or until liquid has become granular but is still slightly slushy.
Step 3
Serve granita immediately.
