Tbsp (45 mL) butter, softened

slices whole-wheat or rye bread

thin slices Black Diamond Marble Cheese (about 3 oz/90 g)

slices peameal bacon
2
eggs
freshly ground black pepper, to taste

Step 1

Using 2 tbsp (30mL) of the butter, spread butter one side of each slice of bread. With buttered sides facing out, place cheese slices in centre to make two sandwiches.

Step 2

Heat a skillet over medium heat; fry sandwiches, turning once, until deep golden and cheese has melted, about 5 minutes.

Step 3

Meanwhile, heat stick-resistant skillet over medium-high heat. Add 1 tsp (5 mL) of the remaining butter; fry bacon, turning once, until cooked through and golden, 2 or 3 minutes. Transfer to plate. Add remaining 2 tsp (10 mL) butter to skillet, swirling to coat. Break eggs into skillet; cover and cook to preferred doneness, about 3 minutes and turning once, if desired.

Step 4

Open up grilled cheese sandwiches; sandwich each with ham and fried egg; sprinkle with pepper, then close again and cut in half.

Step 5

Tip: Use a cheese slicer for thin, wide slices of cheese. Deli-sliced ham can replace peameal bacon – omit frying, if using.
