Tbsp of vegetable oil (15 ml)

clove garlic, minced

carrot, peeled and diced

Tbsp fish sauce (30 ml)

Tbsp soya sauce (15 ml)
1
Tbsp lime juice (15 ml)

tsp sugar (10 ml)
dash of Sambal Olek, or crushed red peppers

cup cooked white rice (750 ml)
¾
cup frozen peas (180 ml)
2
green onions, sliced thinly
Handful of chopped cilantro, optional

lime, cut into slices

Step 1
Heat oil in a wok or large sauté pan over high heat. Add garlic and sauté for 1 minute. Add the carrot and stir fry until tender. Add fish sauce, soy sauce, lime juice, sugar and sambal olek and cook until the sugar is dissolved. Add the cooked rice, breaking up the clumps and continue to stir fry until heated through, about 3 minutes. Add the peas, green onion and chopped cilantro and stir fry until heated through. Garnish with lime slices and serve.
