Simple and pleasurable hors d’oeuvre with an Italian twist.

lb(s) (250 g) puff pastry, thawed

Tbsp (15 ml) Dijon mustard
Fresh basil

large Italian tomatoes cut into ½” (1 cm) slices

cup (250 ml) grated Canadian Cheddar
Salt and ground pepper to taste

Step 1
With the rack in lowest position, preheat oven to 375F (190C).
Step 2
On floured work surface, roll out the puff pastry into 8” x 10” (20 cm x 25 cm) rectangle and cut into 2” x 4” (5 cm x 10 cm) rectangles. Place on a baking sheet. Brush dough with the mustard. Scatter basil leaves over the dough, then tomatoes. Season. Sprinkle with cheese.
Step 3
Bake 20 minutes or until cheese is golden brown.
Step 4
Cut pie into squares and garnish with fresh basil. Serve immediately, as an appetizer or as a starter.
