Watercress, Jicama, And Pecan

small head watercress, washed and stemmed
1
small bunch mixed leafy green lettuce, washed and torn into bite sized pieces
½
jicama, julienned
¼
cup pecan, halves
Dressing
1
shallot, minced
1
tsp Dijon mustard
3
Tbsp sherry vinegar
1
tsp honey

Tbsp toasted peanut oil
3
Tbsp vegetable oil
freshly cracked black pepper, to taste

Step 1
Dry greens in salad spinner or in cloth. Combine ingredients for dressing in a food processor and pulse until smooth. Adjust seasoning. Mix greens and jicama together. Toss with half the dressing. If salad seems too dry add more dressing. Sprinkle with pecans. Reserve any leftover dressing for serving at the table.
