I always look for ways to incorporate a bit of maple syrup into my meals; a drizzle of syrup onto my morning oats or a teaspoon in a cup of tea is such a treat. I decided to take a simple sugar cookie recipe and add maple syrup and a maple glaze. The result is pure heaven.
Maple Cookies with Maple Glaze
1 cup butter, softened
¾ cup brown sugar
¼ cup maple syrup
½ teaspoon vanilla
1 teaspoon baking soda
1/8 teaspoon salt
2 cups flour
½ teaspoon cinnamon
2 ½ Tablespoons maple syrup
1 cup icing sugar
- Preheat oven to 350°F.
- Mix together the softened butter and brown sugar until well combined. Mix in the eggs one at a time until combined. Mix in the vanilla.
- In a separate bowl mix together the baking soda, salt, flour and cinnamon. Add the flour mixture to the butter mixture until well combined.
- Line a baking sheet with parchment paper. Scoop 1 tablespoon balls of cookie dough onto the sheet about 2cm apart. Bake for 12 minutes or until the cookies are golden brown at the edges.
- While cookies are cooling make the glaze. Mix together the maple syrup and icing sugar. Drizzle maple glaze over the cooled cookies.
