Holistic food preparation requires the soaking* of beans and legumes before cooking with them to ensure proper digestion and that the meal will not cause gas.

ingredients

cup dried chick peas, soaked overnight, drained and rinsed
1
cup dried navy beans, soaked overnight, drained and rinsed
1
cup dried red kidney beans, soaked overnight, drained and rinsed
1
large red onion, diced
1
red pepper, seeded and diced
½
cup organic* olive oil
2
Tbsp apple cider vinegar
3
sprig fresh thyme, stemmed and chopped fine
1
sprig fresh rosemary, stemmed and chopped fine
Unrefined sea salt* to taste
Fresh cracked black pepper to taste

Step 1
On the stove top, simmer beans in same pot until tender. Allow to cool.
Mix cooled beans, onion, pepper, thyme, rosemary, salt and pepper together in a salad bowl.
Step 2
Pour on olive oil and vinegar and mix well.
Enjoy.
