Shiso, an Asian herb, imparts its bright flavour on this new twist on guacamole! A deliciously creamy accompaniment to your grilled Ahi tuna steak sandwich.

Guacamole

ripe avocados

lime, juice only

cup sour cream

large garlic clove, minced

jalapeno, seeded and finely diced

small red onion, finely diced

shiso leaves, stem removed
Tuna

oz Ahi Tuna Loin (3-4 oz)

lemons, zest only (no pith)

cup olive oil
4
olive oil buns or Portuguese buns, cut in half

Step 1
In a bowl, mash avocado with lime juice and sour cream. Stir in garlic and jalapeno.
Step 2
Cut shiso leaves into thin strip and mix into guacamole.
Step 3
Season to taste with salt and refrigerate until ready to use.
Step 4
Marinate tuna steaks in olive oil and lemon zest for at least 20 minutes.
Step 5
Preheat grill to high heat.
Step 6
Season tuna steaks with salt and freshly ground white pepper.
Step 7
Place tuna steaks on grill and cook to desired doneness.
Step 8
Place tuna steak inside bun and top with a dollop of guacamole.
Step 9
Serve immediately.
