Anchovy Linguine

This simple pasta dish packs tons of flavour and comes together super fast!

ingredients

lb(s) linguine
3
Tbsp olive oil
cup finely chopped shallot
½
cup white wine
3
canned anchovy, finely, chopped
1
Tbsp chopped fresh parsley
1 ½
tsp coarse salt
½
cup toasted breadcrumbs

Step 1

Cook pasta according to package directions. Drain pasta. Set aside.

Step 2

Add olive oil to a large sauté pan over medium/low heat. Add the shallots. Cook gently for 5 minutes or until soft but not browned.

Step 3

Add the wine and simmer 2 minutes until slightly reduced.

Step 4

Add anchovies. Add 1½ tsp. salt and the parsley.

Step 5

Add the pasta to the pan and toss.

Step 6

Sprinkle with toasted breadcrumbs.
