Ingredients

Tbsp (30 mL) olive oil

Tbsp (15 mL) red wine vinegar
½
tsp (2 mL) Dijon mustard
1
small garlic clove, minced
1
pinch each salt, pepper and dried oregano
16 ¾
inch cubes Black Diamond Mozzarella Cheese (about 4 oz/125 g)

cherry tomatoes

Kalamata or other black olives
8
marinated or canned artichoke hearts, drained and halved

deli-thin round slices Genoa or other favourite salami, each folded in quarters

Directions

Step 1

In a bowl, whisk oil, vinegar, mustard, salt, pepper and oregano. Add cheese, tomatoes, olives and artichokes, tossing to coat; let stand for 10 minutes.

Step 2

On each of 16 small skewers, thread one piece each of artichoke, salami, cheese, olive and tomato. Place skewers on a platter; drizzle with any remaining marinade.
