Apple Bran Muffins

Ingredients

cup packed brown sugar

egg
1
cup Natrel Lactose Free Milk

Tbsp vegetable oil

Tbsp molasses
1 ½
cup natural wheat bran

cup all-purpose flour
1
tsp baking soda
½
tsp baking powder
½
tsp salt

cup finely chopped, peeled apple

cup raisins

Directions

Step 1

Combine first five ingredients in large mixing bowl. Mix well. Combine bran, flour, baking soda, baking powder and salt. Stir into Natrel Lactose Free Milk mixture. Mix well. Stir in apple and raisins. Spoon batter into greased muffin pan. Bake at 400°F (200°C) for 17 to 23 minutes, or until top springs back when lightly touched.

Step 2

Tip:
· To sour milk put 1 tbsp (15 mL) lemon juice in measuring cup. Fill to 1 cup (250 mL) with milk. Let stand 5 minutes, then stir well.
· Natural bran is light brown flakes. Don’t substitute with hard cereal pieces.
· Replace raisins with chopped dates or dried cranberries.
