This apple and date loaf with the unexpected but wonderful addition of cheddar is perfect for brunch or just a coffee break.

cup vegetable oil

cup milk

cup sugar

cup all purpose flour

cup whole wheat flour

Tbsp baking powder
½
tsp salt
1
cup + 2 tbsp grated cheddar cheese
1
cup Mutsu (Crispin) or Granny Smith apples, peeled and diced
½
cup dates, chopped

Tbsp brown sugar

Walnut Hard Sauce

cup walnut pieces
½
cup unsalted butter
1
cup brown sugar
1
tsp cinnamon
brandy
¼
cup whiskey
½
cup whipping cream

Step 1

Preheat oven to 350 F. Grease a loaf pan.

Step 2

Whisk together egg, oil, milk and sugar.

Step 3

In a separate bowl, sift flours, baking powder and salt and stir into egg mixture.

Step 4

Fold in 1 cup cheese, apples and dates.

Step 5

Bake for 30 minutes. Combine 2 Tbsp cheddar with brown sugar and sprinkle on top of loaf when at the last 10 minutes of baking.

Step 6

Preheat oven to 350 F.

Step 7

Toast walnuts lightly in oven for 12-15 minutes until browned.

Step 8

Melt butter with brown sugar over medium high heat. Stir in cinnamon. Bring up to a simmer, stirring. Add whiskey carefully (watching for flames).

Step 9

Stir in cream and simmer for 1 minute.

Step 10

Remove from heat and stir in walnuts.

Step 11

Serve hot. Sauce can be chilled and reheated in the microwave.

Step 12

Pour sauce over slices of loaf. Enjoy!
