Applesauce and Tomato Ketchup

cup Passata Di Pomodoro (250ml)

cup unsweetened applesauce (250ml)

cup apple cider vinegar (65ml)

Tbsp packed dark brown sugar (30ml)

tsp roasted garlic paste (5ml)
tsp Worcestershire sauce (10ml)
½
tsp dry mustard (2ml)
½
tsp sweet paprika (2ml)

cinnamon stick
¼
tsp whole allspice (1ml)
¼
tsp whole cloves (1ml)
salt and freshly ground black pepper

Roasted Garlic Paste

heads large head of garlic

Tbsp olive oil (15ml)

Step 1

Combine tomatoes, applesauce, brown sugar, vinegar, Worcestershire sauce, mustard, paprika and garlic in a saucepan.

Step 2

Tie cinnamon stick, allspice and cloves in a cheesecloth and add to tomato mixture. Cook, over medium heat, stirring, until thickened, about 15-20 minutes.

Step 3

Remove and discard the spice sachet. Season with salt and pepper, to taste. Cool. Store in refridgerator for up to 1 month.

Step 4

Makes 1.5 cups/375ml

Step 5

Preheat oven to 350F/180C.

Step 6

Cut top off garlic to expose garlic cloves. Rub with oil and wrap in foil.

Step 7

Bake in centre of oven in a small baking dish for about 45 minutes, until soft. Let cool.

Step 8

Squeeze garlic into bowl and mash with fork.
