Lettuce wraps are a light weeknight meal that double as a delicious lunch. Brought to you by Uncle Ben’s.
Tbsp (15 mL) oil
lb(s) (500 g) lean ground beef
clove garlic, minced
tsp (5 mL) ginger, minced
cup (500 mL) cooked UNCLE BEN'S® 7 Grains Medley (prepared without butter and salt)
cup (150 mL) honey garlic sauce
large lettuce leaves, such as Boston, leafy or iceberg
red pepper, very thinly sliced
carrot, peeled and cut into matchsticks
cup (250 mL) bean sprouts
cup (60 mL) peanuts, crushed
cup (60 mL) green onion, thinly sliced
Heat the oil in a large, nonstick skillet set over medium heat. Add the ground beef, onion, garlic and ginger. Cook for 5 minutes or until browned.
Add the honey garlic sauce; simmer for 5 minutes or until reduced. Stir in the UNCLE BEN’S® 7 Grains Medley; cook for 2 minutes or until heated through.
Spoon the skillet mixture into the lettuce leaves. Garnish with red pepper, carrot, bean sprouts, peanuts and green onion.
Tip: Serve with lime wedges and hot sauce to give these wraps some kick!
