Ingredients

large yellow-fleshed potatoes, peeled
1
package (375 g) sliced bacon, chopped
1
large onion, diced
1
each red and green bell pepper, diced
2
cloves garlic, minced
2
tsp chopped fresh thyme
Chopped fresh chives
Salt and pepper
1
cup sour cream or shredded Cheddar
Maple syrup (optional)

Directions

Step 1

Boil potatoes for 10 minutes. Drain well and let cool slightly. Grate or finely chop; set aside.

Step 2

Cook bacon until crispy and drain on paper towel lined plate. Reserve 3 tablespoons of the bacon fat and cook onion, peppers, and garlic until softened. Stir into potatoes. Add thyme and half of the chives, salt and pepper to taste and cook until potatoes are starting to crisp up.

Step 3

Spoon onto plates and dollop with sour cream. Garnish with more chives and drizzle with maple syrup if desired.
