Tbsp olive oil (30 ml)

quince, peeled, cored and cut into thick slices

Tbsp honey (45 ml)
Sprigs of fresh rosemary or thyme
Fresh bay leaves

cup sherry or marsala (500 ml)

slices Serrano ham, cut in half
Basil, several leaves
Sea salt and cracked black pepper

Step 1
Preheat oven to 350 degrees F.
Step 2
Heat the olive oil in a large sauté pan over medium-high heat. Add the slices of quince and toss until golden, about 5 minutes. Add the honey, rosemary, bay leaves and the sherry (or Marsala if using) and bring to boil. Cover and put in oven. Bake until the quince are soft, while still keeping their shape. Wrap each quince slice with a basil leaf and then a piece of Serrano ham. Skewer with toothpicks and serve.
