Baked Shrimp, Feta and Tomato Pasta

A quick and easy pasta recipe where salty feta contrasts with sweet shrimp all baked together in a tomato based sauce.

Directions for: Baked Shrimp, Feta and Tomato Pasta


1 Tbsp olive oil

½ small onion, diced

1 clove garlic, crushed

1 small can whole tomatoes

1 Tbsp parsley, minced

8 shrimp, shelled, deveined and peeled

¼ cup crumbled feta

2 serving of pasta


1. Preheat your oven to 400F.

2. Put a pot of water on to boil for the pasta.

3. In a small oven proof skillet sweat the onion in olive oil until translucent.

4. Add garlic and continue cooking for another minute.

5. Roughly chop the tomatoes then add along with their juices and the parsley.

6. Simmer for 15 minutes or until thickened.

7. Stir in prawns and sprinkle the feta on top. Transfer to the oven.

8. Bake until prawns are cooked and feta is melted, it should take about 12 minutes.

9. In the meantime add 2 tablespoons of salt to your water pot and cook your pasta.

10. Taste the sauce and add salt and pepper as necessary; then toss with the pasta.
