Why I love this recipe
The fruit and balsamic reduction give the coleslaw a new twist and the flavour of the tomatillos and yellow plums give it a fruity freshness and a mix of sweet and acidic flavours that pair well together.

Add more dressing, depending on how creamy you want the coleslaw.
After washing and peeling the carrots, grate them into a large bowl.
In the same bowl as the cabbage, grate the cabbage and toss lightly to mix the two ingredients.
Finely dice the tomatillos, plums and onions and toss gently into the bowl of grated carrots and cabbage.
In separate bowl, mix the dressing with the balsamic reduction, garlic, salt and pepper.
Whisk dressing till ingredients are well mixed and pour into the coleslaw and toss gently so you don’t mush the plums.
Make the day before you’re going to serve and chill in the refrigerator.
