I love the combination of banana and blueberry in this muffin! The bananas make this muffin ultra moist and delicious. This is a nutritious muffin to boot – it’s low in fat and there’s whole-wheat flour and oat bran in the mix.

or 3 bananas, mashed (about 1 cup/250 ml)

cup apple butter (60 ml)

cup brown sugar (60 ml)

cup buttermilk (175 ml)

Tbsp vegetable oil (30 ml)

cup whole wheat flour (375 ml)

tsp baking soda (10 ml)

cup oat bran (60 ml)
Freshly grated nutmeg, to taste

tsp ground allspice (1 ml)

cup blueberries, fresh or frozen (125 ml)

Step 1

Preheat oven to 350 degrees F.

Step 2

Prepare a medium muffin tin by lining with muffin paper or brushing/spraying with oil.

Step 3

Sift flour, baking soda and salt in a bowl. Add oat bran, nutmeg and all spice. Stir well to combine. Set aside.

Step 4

Mash banana in a bowl. Add apple butter, vanilla, brown sugar, buttermilk and vegetable oil. Stir to combine.

Step 5

Pour the wet ingredients into the flour mixture. Stir with a wooden spoon until just combined. Some of the flour may still remain visible. Do not over mix or the muffins will be tough. Fold in the blueberries.

Step 6

Spoon batter evenly into prepared muffin tins. Put in the middle rack of oven. Bake until golden, about 30 minutes. Makes 12 medium muffins.
