ingredients

Bannock

cup flour

Tbsp baking powder
½
cup sugar

tsp salt
lard for frying

Blackberry Compote

cup blackberries
½
Tbsp butter
cup golden brown sugar
cup white sugar
¼
tsp vanilla

pinch salt

Raspberry Compote

cup raspberries
½
cup white sugar
½
lemon, juice and rind

Step 1

Preheat lard in a deep frying pan to 350 degrees Fahrenheit.

Step 2

Mix dry ingredients together.

Step 3

Add water until dough forms, mix until just combined. Do not over mix or dough will become tough.

Step 4

Divide dough into 12 pieces and form into small cakes with your hands.

Step 5

Drop dough into lard and fry until golden brown on both sides and cooked through. Serve bannock with blackberry and raspberry compotes.

Step 6

Cook berries in a saucepan over medium heat until softened. Add remaining ingredients and cook until sugar is dissolved.
