Oysters

dozen fresh oysters, shucked

cup peanut oil (500 ml)

cup flour (180 ml)

egg, lightly beaten

tsp salt (1 ml)

cup beer (250 ml)

Aioli

1
egg yolk
1
clove garlic
1
tsp lemon juice (5 ml)

tsp lemon zest (5 ml)

tsp lime zest (5 ml)

tsp orange zest (5 ml)

cup canola oil (250 ml)

Step 1

Place flour, egg and salt into a bowl. Lightly whisk together and then pour in the beer while continuing to whisk. Mix only until incorporated. Set aside for about 30 minutes to rest.

Step 2

Make sure oysters are fairly dry and dip them into the beer batter. Put into the hot oil and fry until golden on one side. Turn them and fry on the other side. Remove from oil, drain on paper towel and serve with citrus aioli.

Step 3

Put egg yolk, garlic and lemon juice into the bowl of a small food processer. Process until smooth. Slowly begin adding the oil in a trickle to form an emulsion. Add the zests and season with salt and pepper. Set aside.
