Preheat the barbecue to 400°F.
Wash and dry potatoes, and pierce skin with a fork.

Place potatoes on pre-heated grill and cook for 25 minutes.
Brush with butter and season with salt. Continue to grill until tender, about 25 additional minutes.
Slice potatoes down the middle and pinch to open. Fill with a nub of butter and transfer to a serving plate.

As the potatoes bake, prep the toppings. Place individually in small ramekins and transfer to a serving tray.
