Make use of cooked turkey meat and the whole turkey carcass in this easy soup also featuring frozen veggies and herbs.

Ingredients

qts vegetable stock
1
turkey carcass
1
(10-oz) frozen mixed vegetables
½
cup rice
2
cups cooked turkey, cubed
1
tsp Old Bay seasoning
2
tsp dried thyme
Salt and pepper, to taste

Directions

Step 1

Combine the vegetable stock and the turkey carcass in a large soup pot over low heat and bring to a simmer. Cover and simmer for 1 hour.

Step 2

Add the remaining ingredients to the stock. Cover again and simmer for an additional 20 minutes.

Step 3

Season, to taste, with salt and pepper.
